1/2 cup marsala wine
1/4 cup white vinegar
1/4 cup oil
1 tsp basil
1 tsp thyme
a sprinkling of garlic
combine above and pour into ziploc bag. Add cubed potatoes and chill in refrigerator for two hours. remove potatoes and lay on well oiled piece of foil, wrap, and throw in 350 degree oven for 30 minutes.
30 minutes isn't long enough. Try 45 minutes--in fact, I put it on the lower rack and put the broiler on--but left the oven door open and the exhaust fan on high.
Lunch again today was the main meal. BBQ chicken, fried okra, jalapeno stir fried corn, green fordhook limas, brussels sprouts, sliced tomatoes, various pies, lots of tea. I know there was more in the way of veggies but just didn't have room for anymore.
Lasagna with garlic bread. Salad with Italian dressing.
