My husband came home from the market with a bunch of beets the other day, and I cooked them, not exactly sure what I would do with them. Well, today as I was surfing the internet, I came upon a recipe for a beet dip made with tahini, walnuts, lemon, garlic, feta cheese, and olive oil, which I made this afternoon. OMG, this stuff is fantastic and, like all beet dishes, the craziest shade of magenta! I ate the whole bowl spread on toasted asiago bread, and I want more, more, MORE!
