Down here in FL where we grow them oranges they have "peels" Watermelons have rinds....

Break them up and add to some heated refried beans, wrap in tortilla with salsa and shredded cheese . . . awesome.

I still have an unopened bag of 'rinds dated September '09. I would hate to throw them away. I figure, maybe they're still good? But I won't open them - in case they're not good. So I will keep them on top of my refrigerator forever, I guess.

My grandmother used to fry her own crackling. I love the taste and texture but haven't had any in years.

I don't like pork cracklings all that much. The other day though, I was starving, and I found a bag on top of the fridge and ate like one third of the bag. They were delicious.
