The heading says it all. I'm so tired of potatos.

But I've got a craving for meatloaf sandwiches, which requires a meatloaf dinner for the leftovers.

Macaroni and cheese, Silly.
I am not a rice fan, but I can see something like red beans and rice being a good compliment to meatloaf.

hhhmmm.......I make meatloaf just to put in the fridge for sandwiches, I don't always have a meatloaf dinner. Anyway, we do macaroni and cheese, green beans, applesauce and cottage cheese with tomato slices. You could also do rice pilaf, cous cous, orzo, or make a cauliflower, squash mash and yams are always a good substitute for regular potaoes.

The Doctor's Kitchen: Zucchini Parmesan Crisps
Summer Squash Gratin | OliePants

or you could serve it on a bed of ratatouille...or maybe some baked asparagus fries...

Squash casserole would be good. I've been craving the one with the Pepperidge Farms stuffing mix on it.

True! Homemade M&C is a given! But hubby hates M&C. We usually have that when he's out of town.

WAIT! He is leaving town TOMORROW! If I can postpone this craving for a meatloaf sandwhich....

(I'm tired of rice too. That's what we have on the nights we don't have some form of potato!)

I need to find a cookbook for side dishes!

Buttered egg noodles, rice pilaf, squash, pumpkin, sweet potatoes, bread stuffing, vermicelli.

Not all at the same time, of course.

Of course, hubby also had mashed potatoes....
