Today I dug up some German butterball potatoes. A lot of the potatoes have new roots and eyes on them. There are very few that are not like that, like around 6 or so. Is it okay to eat the potatoes today? Also, can the potatoes that have have the new roots and eyes be eaten? Thanks for responding.

Yes, just peel them and if there's any green under the skin peel that off too until you have only white.
