Small town, mild winters with trees? (job market, movies, living in)

I am an Oregon native, have lived in the Bay area and St.George, and am currently living in Flagstaff, AZ. I am wondering if there is a small-mid town out there that has a mild climate with more sun than Oregon, less snow than Flag, less desert than St. George,and lower-key/more rural than the Bay? I really enjoy being outdoors as much as possible, so St. George and the Bay were lovely climates, I just missed being in trees in St. George and missed simple, grounded living in the frenetic Bay. Flagstaff is near-perfect, except that I find myself getting sick often with the drastic weather changes and elevation. I was thinking of perhaps northern California, if there are affordable communities, but am actually open to anywhere in the US, Canada, or Mexico. Thank you for your thoughts!
On second thought we have a lot of weather changes so maybe the Piedmont of North Carolina would be best for you. We have 100 counties and most of them have small towns as the county seat so take your pick.

Maybe Arcata, California? Small Town in northern California, near the Ocean, some movies have been filmed there, like Outbreak with Dustin Hoffman

I think NC would be a good option though agree Asheville could be too erratic weather-wise due to it's geography in terms lack of nearby mountain peaks shielding from incoming weather systems. Just to the south in Hendersonville would be a nice option since it sits on a plateau yet still at elevation (just over 2000 feet) and is protected from weather much more so than Asheville. It has mild winters and little snow/ice along with fairly equal coverage of the other three seasons. Humidity isn't an issue in summer unless one has zero tolerance and autumn is beautiful! Hendersonville has a thriving downtown with plenty going on in it's own right and is just 30 minutes away from Asheville's ton of things to do.

Depending what the OP's career or job is, Arcata doesn't really have a job market (much like Eureka). Unless the job is work from home, it'd be very limited
