For target shooting and plinking, my wife's AR-15 H-Bar. In a previous life, the GAU-8 (30mm when I flew the A-10).

Just got a Walther PPS M2 LE version - very, very smooth. More impressed than I thought I would be. Very comfortable single stack 9mm.

The same day I took a 1970 nickel-plated Colt .45 Single Action Army out of the safe. Cleaned it up and put some long Colts in it. THAT was the most accurate, easy shooting pistol I have ever fired. Makes me want to take the 1902 version out of the safe and give it a try, too.

(Now I know why John Wayne always carried one...)

Glock triggers take a bit to puzzle out, agreed. I had a G26. End of the day, I felt it too much of a "hammer" for my needs, but it was a fine gun for what it was. To do again, I'd buy a single stack (G43?). If needed, figured I could throw the empty gun at my opponent and do some real damage, given how bulky it was. Try shooting 800 rounds in a combat course weekend, you'll learn a lot about the Glock trigger for-sure.

Favorite is my Volkmann Combat Carry (1911 custom, Commander-size). Luke can build 'em, I'd suggest every pistol aficionado have a custom 1911 (or Wilson, Ed Brown, or other semi-custom) in their arsenal at least once in life. Very accurate, match trigger, NP3 so it doesn't need to be oiled much if at-all, though I do some simple cleaning once in awhile.

I determined years ago that Commander-size are my Goldilocks 1911s, so sold a full-size and ultra compact to finance the custom Commander, appropriately enough.

I enjoy my Irish Contract No.4 MkII Enfield 303. It's much more fun to shoot than my AR15 and AK variant.

Most fun has to be the suppressed 10/22, now that 22 rimfire ammo is cheap and plentiful again.

Quiet, accurate, and lightweight. Has a SB-X barrel, so all the advantages of a SBR or integral suppressor without the added cost.

I had machine guns in the 80's and 90's, they are too darn expensive to shoot. I had a Mac 10 9mm, a Mac 10 .45, a Mac 11 .380 and all with suppressors, an Uzi and an M16 in .223 with a 9mm conversion kit and friends had M60's at $50 a 100 round belt back then for surplus ammo. Yes they are fun to shoot but they cost more than a spoiled princess wife to support, I will stick with semi autos.
