They are all over the place because its kind of the main topic of discussion in a lot of circles right now. Maybe not the main thing focused on but its the most common shared theme among Americans lately. We will move on to the next topic eventually but right now its peak vaccine season in America. This week we are hitting 1/3 of Americans having received at least one shot. That is kind of a big deal!

Don't really need a dedicated forum; it probably won't be a topic of interest once everyone who wants it has it.
There's not even a dedicated regular vaccination forum, and that's an ongoing controversy.
