In my first place I had a lot of ornate trim etc in the living room, and I left everything white...including my sofa. I had slipcovers. I just took them off and bleached them every once in a while. I had cheapo Ektorp from Ikea, but while incredibly cheap, those are OK for a single person. My new tenant, on the other hand has the most BEAUTIFUL white, slipcovered sofa. It looks like something out of Anthropologie. A little French-inspired but still modern.
I like white because when it gets dirty, you can bleach it and get it very clean. You can't really bleach a light tan color. I would also recommend a sturdy fabric like cotton duck or denim and getting at least two sets of slipcovers. Also, make sure the fabric is machine washable.
I bought expensive-ish couches. Now that my tastes have changed and they look dated, I feel bad about replacing them because they are in perfectly fine shape. (Plus I don't have the money.) They are dark and don't show any wear. The first thing that popped into my head for you was Pottery Barn's slip-covered couches. If there's a spill, you can always wash them. :-) Best wishes!
I have two white sofas in the living room that are hardly ever uncovered...and I worry about them constantly when they are..company, holidays, and such. Hubby has blue, yes Blue leather furniture in his man cave. I hate it but I don't worry about it half as much. Someday I will have more neutral, livable and likable furniture. lol.
I love the look of white sofas. I took the plunge (cheaply to try it out) and bought a white slipcovered IKEA sofa for the basement family room. It cost me 399 and I invested 49 dollars more into a second set of white slipcovers. I live with two cats, a dog and two bears....I mean males. I have had to swap the slipcover once so far in the year and half I have owned the sofa. The covers are machine washable. The instructions say not to dry them but I put them in dryer anyway on air fluff. To be honest, I'm shocked at how well its holding up. Not the finest piece of furniture out there but it really is a comfy couch! Just ask my cats.
