Misaligned quartz countertop - possible to remove/reinstall? (counter top, sink, cabinets)

I had a quartz slab put on a half-island in the kitchen. It's a 10' long slab. The overhang is 1/4" on one end and only 1/8" on the other (the side against the wall). It's a little bit noticeable that wall-side overhang is quite a bit shorter (twice, if we use math). The other problem is that the sink's edge in the middle was installed flush with the stone, and obviously one side of it sticks out a little (I'd say 1/16" but noticeable) due to stone being put an angle.
The installer used epoxy to glue it in. They said once it's glued in... it's glued in. I brought up the issue of the crooked sink earlier but decided not to do anything about it. But now I did all the measurements (after noticing the countertop was not right) and found out about the discrepancy.
Is there a sure way to remove an epoxied quartz top without damaging the cabinets after it's been glued in? Or should I just live with it?
The counter top itself is usually just silicone caulk- the sink is epoxied.
A long thin putty knife is usually good enough to cut the caulk loose to move the counter. To re-caulk just lift and shoot a few dabs of caulk on the top edge of the cabinet, realign, and don't touch it for at least 24hrs.
