I'm getting new granite counters and they come with a free 16-gauge sink. I could also get an upgrade to 18-gauge for $150. Is it worth it? What's the difference?

16 guage is thicker than 18. technically that would be better.

realistically, 18 guage is fine plenty of quality sinks are 18g. And there are plenty of cheap 16g sinks.

pick the sink you want of either guage

In addition to going with the thicker gauge, I'd suggest going with one with deeper bowls. If the dealer doesn't have access to deeper bowls, see if you can get a credit and locate one yourself. We got ours after searching the internet.

beyond the thickness... VERIFY the type of stainless
look for the phrases "type 304" or "18-8"

the cheaper types of stainless will rust

The cheap stainless may be magnetic...real stainless is NOT..
