Occasionally we would find a giant roach (2+ inches long) in our apartment. Last night I saw one. I lost sight of it. What usually happen to them if I didn't get to kill them and don't see them getting out? I'm afraid they'll die and rot inside the home. If I open windows/door to let it out more could get in.

They can live anywhere from 1 to 4 years. What's very important to note is that these bugs can survive for 4 weeks without food and just 2 weeks without water.

I wish I could have that kind of endurance
Are they attracted by light?
I don't feel like letting the pest control guy spray harmful pesticide in the home. I use vinegar for bugs (such as ants, also occasionally).

They are "American Cockroaches". Or as some refer- Palmetto bugs.
Diamoceous Earth is a good alternative to pesticides- but only if you have it where they go. Sometimes your only choice is pesticides- they can be sprayed into areas where you cant get Diamoceous Earth applied.

I just want to either catch them or get them fly out. Prefer not to let it die in some hidden corner, too gross, unless I kill them. How can it be attracted to the door? Light?

If you see one, you're not seeing his 50 buddies. Get in pest control.
They are attracted to food and water. They usually scurry away in the light. Entry points can be very small but often are things like holes through the wall for pipes or electrical.

Bugs are pretty low on the gross factor... their limited internal moisture dries up and what you have left is basically a chitinaceous pebble with no goo and no odor. Not nearly as horrid as a dead mouse or rat or anything larger.

if you see one in your home and dont kill it, it will either hide in your toilet and crawl up your butt while you poop or it will slip inside your mouth while you are sleeping and lay eggs in your throat.
