For my birthday I'm finally getting an induction stove. I've been through my cookware and will need to replace a few things.
What I use most:
A small fry pan - 6 inch diameter
A medium fry pan - 8 inch diameter
A small sauce pot with lid
A medium sauce pot with lid
A pot for pasta. Personally, I prefer one where the lid is a strainer rather than a strainer insert.
A small teapot
Everything else I have covered with what I already own.
I tend to prefer non stick surfaces.
I will pay for durability.
I am concerned about handles that get hot - I've burned myself more than once that way.
All-clad is excellent. And this set from Crate and Barrel is stunning (although not non-stick)- I would have bought it the last time I was there but I just don't need any new pots!
I have Scanpan. I recommended my friend get some for her husband and he loves them as well. He uses it for gas but all of mine work with induction. Right now I just have a single portable hob, but they work very well. I only have a few pans so far. They are pricy, but well worth it I think.
Tramontina 3 ply stainless steel - not non-stick, but most non-stick pans are aluminum and won't work on induction cooktops.
It is made of premium 18 & 10 stainless steel & features an impact-bonded, tri-ply base construction (consisting of stainless steel, an aluminum core & a magnetic stainless steel - for induction cooktops) to help distribute heat quickly & evenly when cooking. https://www.walmart.com/ip/Tramontin...Piece/23080037

Cast iron skillet & griddle & dutch oven

(12" griddle / lid & 12" skillet - great size for fried chicken)
I bought a set of Farberware. Not non-stick, handles do get hot, but very economical and work well on induction. I also have some enameled cast iron that I use occasionally. My teakettle is from Chantal who also sells wonderful cookware.
