Deals can definitely be found. The issue is the ability to be flexible or not. Spring break week is a fixed point in time. No ability to be flexible...so that's the issue. Airlines know this, so tend to jack up prices for that time period.

My husband was able to buy tickets a few weeks ago from Amsterdam to Houston, roundtrip business class for $1,100 and he flies out later this month.

You misunderstood. I meant Google flights is better for fixed dates than Hopper. Google Flights is also good for fixed dates. I set alerts on everything anyway because some catch them before others. I've found many many an excellent deal this way.
