Does anybody know of a diner around Houston that serves livermush all day? I have some friends that have never eaten it and I want them to try it out.

A pound of sliced, pan-fried livermush garnished with parsley


Livermush is a Southern United States food product composed of pig liver, head parts, and cornmeal. It is commonly spiced with pepper and sage. Though sometimes considered the same as liver pudding, livermush (or liver mush) is generally coarser in texture and commonly found in the western part of North Carolina. It normally has a different recipe from liver pudding, though the distinction is blurred.

I didn't look it up to see what it was but just the two words "liver" and "mush" together makes my mouth water.

You should give it a shot, it's not expensive and they sell it in the grocery stores down here. I recommend Neese's brand. Just cut off a quarter inch slice and fry it in a pan until it's nice and crispy on both sides. It's really on of those foods that sound disgusting but, because you grew up eating it, you just accept it for what it is and never think about it. I understand the hesitation of people to try it because everybody says crab is delicious but I can't bring myself to eat seabugs.

Why judge food by the name? Never had oxtail, blood sausage, or headcheese?

My grandmother used to try and sneak liver by me, in many forms, and I hated them all. Ewe....Ewe,....Ewe.

I have had people tell me fried Spam was wonderful, too - and I will gladly die without ever trying it.

Now crabs? Yum. I will even suck heads on crawfish (YUM), but not Spam or liver anything.

Will try almost anything once - but as an adult, no one can make me eat Brussels sprouts nor liver again.Because I am grown and I don't have to.

IIRC, livermush is NC. My granny made it. You could call it polenta with pate, fried.

Why not just order it online? I've never seen it in stores, but I'd certainly be willing to try it if it was available locally.
