I'm becoming a little desperate when applying to jobs.

Would I be "overqualified" if I apply to jobs that only requires a high school diploma? Or should I leave it off my resume?

Whatever your highest level of degree or diploma should be listed. If the position requires a high school diploma or equivalent at the minimum and a prospective applicant does not have it listed, I assume he or she did does not meet the requirement and is removed from consideration.

Assuming you have a college degree and are applying at jobs which only require a high school diploma, it is probably best to leave a BA off your resume.

Sorry, I forgot to mention that I have a college degree.

So do I just leave my education blank or put my high school?

Leave your degree on, if its a big company. other openings can have degree requirements and transfer there.
if its like a job as a receptionist in Drs office. leave it off

Your college degree might pop up in a background check

I leave my college degrees on my resume. Hell, I paid for them and spent the time to get them, I am proud to show them off, even if I am applying for a job that only requires a High School education. If they want to reject me because I am "over-educated" so be it...hiring managers will always find other ways to reject you.

You can't be the perfect purple unicorn on your resume for every job you apply to. Just list your skills, experience, education and be done with it. Be proud of what you have achieved. Someday, maybe someone will appreciate your skills and education and hire you. That's my dream, anyway.
