Here's a recipe for opossum pancakes:

Ingredients:
2oz Possum meat
1.5 cups pancake mix
1 cup whole milk
1 egg
2 tbsp sugar
1/4 stick of butter


Directions:
1) Go out driving and look for freshly killed possum roadkill. If none is to be found, set up possum bait in the road, sit in car several meters away and wait. When possum comes to take bait, step on the gas and run that sucker over.
2) Scrape up possum and bring home for fileting. Cut meat into cubes.
3) Put possum meat into blender and liquefy.
4) Pour blended possum and rest of ingredients into large bowl and stir thoroughly.
5) Cook on medium heat until lightly brown.
6) *Optional - Mix maple syrup with possum blood for extra possum flavor

Opossum is to greasy I don't care how you cook it, same goes for groundhog. I've had it when I was a kid, but I don't care if I ever have it again.

The greasy taste normally comes from the road surface that they were on at the time of their demise....
