I know of a guy who is a visiting professor in IIT. He is a GC holder but keeps travelling to India for his classes.

Being visiting professor is fine as its not full time position. But the situation here is different, he is senior professor, got a house in central Delhi, official car, people to work in house, paid leave and vacation, insurance and other govt. perks.

He basically wants to have his cake and eat it going by what you are writing. Either he quits his job and goes through with the Green Card application or he keeps sneaking around.

yeah it seems like this but he was unaware of it when we filed his petition. Ignorance on our part :-(.

I think you're confused about the process which is curious since you say you've already filed the application for your father. You only have to tell USCIS what USCIS asks for. I'm not sure what you mean by filing a petition only after a person has completed the first 90 days on a visitor's visa. Here's the USCIS section which explains the process.
