Growing up my mom always served COTC after the main portion of the meal had been served. She would time it as we sat down and then drain it while we ate. Her theory being, it kept it hot in case you wanted butter on it. Putting it out to sit on the table would only get it old.

Along comes DH to the family and he thought it crazy. It might be, but I still do it all these years later. I am bringing it up because we were back on LI this weekend and this is how the corn was served. We have noticed this many times and started to wonder if it is just personal preference or a LI thing or something else.

Not talking about a Bar-B-Que, as that is much more casual but in your home, how do you serve COTC?

Again, not something to lose any sleep over but I am just wondering.

We cook it in the pressure cooker and serve it with the meal, always. Haven't had any problems with it getting cold!

My family and I boil COTC, but we eat the corn first because it does get cold fast.

DH's family roasts corn in their husks on the grill.

I like it either way. I LOVE COTC!!! The BEST I have ever had it was out east after apple picking in the Fall. YUM!

We always had it after the meal as well! I thought it was crazy the first time I saw it served WITH a meal! My mom is from New Hampshire, by the way.

Here I serve it with the meal (usually) but I have separate little corn cob holders so it doesn't have to go on anyone's plate.

I think my mom started serving it post-meal so that it would be cooler for us kids. I remember she always left hers and my dad's in the hot water.

If we were eating inside, we went to the stove with our plates and were given an ear.

If we were eating outside (barbeque).. we did the same... only up to the grill.

Now, with me alone at home........I eat it first!

My mom always cooked corn in a pot, but served it with dinner while extra cobs remained in the pot if people wanted more during/after the meal.


We only grill COTC without the husk these days. We baste it with butter, pepper and a little salt while it's grilling. I know others who baste it with different seasonings like cayenne pepper, etc..

We roast COTC in the husk, and leave it husked until a person is ready to eat it. Inside I have COTC corn holder plates and corn skewers to use, outside one may use those or peel the husk back and use it as a handle. It's served with the meal.

DYK -- corn in the husk can be microwaved. You put it husked in the oven for about 2 minutes (depends on microwave and size of ear) and it comes out hot and delicious. Perfect for when your the only one home and want COTC and don't want to boil a pot of water or fire up the grill.

We butter it first, then wrap in tinfoil and grill.

If not grilling, I a stick of butter in the boiling water with the corn. No need for extra butter.

I agree with your DH. I have never heard of waiting til the meal was over to have the corn. It sticks in your teeth, and eating other foods helps get it out, plus, if I didn't know she had the corn "waiting" I would already be full.
