Whenever I go to these cool outdoor Long Island fairs I see gourmet pickle salesmen and I usually buy a quart of some awesome garlic pickles. While shopping at my local green grocer I saw kirby's and pickling cucmbers for like .49 a pound! Now I want to try to make my own pickles but not the simple kind where you just slice, soak in a ready made mix and leave in the fridge for a week. I want to make the kind they make at these local Long Island fairs. Anyone have a how-to website or recipes they can share? I always wanted to make jalepeno/onion/cucumber mix and I want to try out some recipes.
Any direction would be great - I only turned up simple how-to's not the kind I am searching for....which is usually made in large (5 gallon) plastic tubs....

your best bet might be trying to find a book at your library. Agway in Riverhead sells alot of canning and pickiling supplies but I'm not sure if you'll get any expert advice there.
There are message boards like "homesteading today" that are not local but have people with serious knowledge of canning & pickling.
