I can't think of any LotR crossovers with Harry Potter or Star Wars.
Star Wars and Harry Potter were all filmed mostly in England with a largely English cast. LotR was filmed in New Zealand, and outside of the principal leads, nearly all the secondary cast was made up of New Zealanders. So I'd be very surprised if there is any crossover for all 3 films.
There is 1 very obvious LotR/Star Wars crossover: The fantastic Christopher Lee, who played Saruman in the LotR films and Count Dooku in Episodes II & III of Star Wars.
John Rhys-Davies is in both I think. He's Gimli in LOTR. I've never seen or read Harry Potter so I don't know his chatacter's name.
After a quick visit to imdb.com I can confirm he is not. I could have sworn he was the guy with a beard who said, "You're a wizard Harry." in a commercial or trailer for one of the earlier movies.

I think you're referring to Hagrid lol I don't think he could be mistaken for the guy who played Gimli though. I never realized until I googled it that Professor Flitwick was Willow...I loved that movie!
The first Dumbledore (The Sorcerer's Stone & The Chamber of Secrets) was played by Richard Harris. The rest of the movies Dumbledore was played by Michael Gambon. Gimli, The dwarf in the 1st 3 LOTR movies was played by John Rhyes-Davies, Hagrid, in Harry Potter was played by Robbie Coltrane.
