Steely Dan had a lot of short solos... I used to use this as an installation cassette (yes, cassette) back in the early 80s when I was installing car stereos. "Aja".

A country music guitar master Junior Brown:

Solo starts at 1:03, and really gets going around the 1:22 mark.





Here's a song he does that is almost entirely instrumental and is ridiculous.
Between 2:00 and about 2:50 he definitely leaves the genre of country music.




Then there are your Jazz greats like Wes Montgomery, Django Reinhardt, Joe Pass, John McLaughlin, Al Dimeola, etc. etc.
The Blue Grass pickers like Vince Gill, Lester Flatt, Jerry Douglass, Roy Clark.
Flamenco has their greats too.

Although, since most of their music are instrumentals it's hard to find what one might consider a "solo".

A lot of great blues guitarists have iconic solos... Stevie Ray Vaughn comes to mind. But what about this one from Gary Moore?

Whether underrated or overrated, depending on the critic, Peter Frampton nonetheless could play guitar. A couple from his I'm In You album. "Won't You Be My Friend" uses a lot of slide, and was the basis for Will Smith's "Parents Just Don't Understand". The other one, "St. Thomas (Don't You Know How I Feel)" has a pleasant extended solo, very mellow, very 1977.
