I would like somewhere that has good schools and is not boring, i.e. somewhere we can walk around, go out to restaurants, etc. I will be renting---doesn't seem like a lot of places for rent in Northern NJ that are family friendly.

There are plenty of towns in North Bergen that's family friendly and it's matter of what requirements you have.
Since you have good school district requirement with under 1hr to Wall St. That would eliminates Jersey City, Hoboken, and Brooklyn... Unless you are willing to pay for private education, in that case all of 3 towns above are very viable option. It also limits your transportation mode, it's pretty much going to be ferry or lightrail/path. Bus will take too long.
Take a look into Edgewater (by ferry) and Weehawken (light rail to Path or ferry). Both have decent public school system and definitely far better than 3 towns I mentioned above for public school. I don't think you can do from Fort Lee to Wall st. under a hour unless someone drops you off by the ferry or you live right by Edgewater border and walk down to catch a ferry bus service.
That said ferry is expensive I think 250-300 a month (from Edgewater anyway) so take that into account.

Edit: I know you said NJ but check out Brooklyn too if you are considering private education.
You could also take the ferry from Atlantic Highlands directly to Wall St. That's usually under an hour. The towns around there should have something in your price range.
Just a heads up -- none of the NJ suburbs will give you an end to end commute of under one hour, but you should be able to get close to that if you stick with towns where the train ride to Hoboken is no more than 40 minutes (though more like 30 minutes is better).
I would suggest starting with Montclair, Summit and Ridgewood.

I get to Wall Street in an hour from Montclair. I take an 8:05 train gets into Hoboken at 8:30. Take an 8:39 Ferry and I am at pier 11 at 8:54. It can be done
elflord's point was home door-to-work door type of commute is not possible in NJ suburbs to NYC. Train or bus ride alone usually is hour so if you add in time you need to get to bus/train and wait, etc. It's definitely not possible. More like 1.5 hr commute door to door I'd say.

That varies , some towns you can get as low as 45mins.
