Single early 40's professional white woman, considering renting in Jersey City. My budget is $2000 a month. Is it possible to find a 1 bedroom there in a non-sketchy area?
Hoboken blows. Jersey City is a more fun and interesting place. I'd suggest anywhere within a 10-min walk to the grove street path station, or around Hamilton Park if you don't mind a longer walk to the train. Your budget should get a decent 1-bedroom apartment. It won't afford you luxury amenities, though.
For that price you can get a decent walk up apartment around Grove St or Hamilton park in JC. The newer tower constructions are mostly priced above $2K per month.

I agree with this post. I am a 40 something male and much happier with my decision to live in JC vs. Hoboken. You won't be able to find anything in a high-rise for that price, but you might find something in a walk-up (brownstone).
I am moving with my young family to NY in November (mostly), would be working around WTC. We have a two and half yr old kid. Looking for some guidance here
1. What is a good way of looking for an apartment. Once I am there, should I stay in a hotel and do the house hunting in parallel. What are some alternatives or good options.
2. Like to know some locations in nj with reasonable renting options (less than $2400) which will be make my daily commute easier and has a good hustle bustle about it.
Depends on your comfort level with urban grit. I'd actually recommend JSQ for better rent prices and more choices. Downtown area is pushing $2500+ for 1/1 in those hi-rise rentals. Old walk-ups can net you something lower. That said JSQ can give you more choices for better price.
Heights too if you don't mind biking down or taking gypsy bus.
