I am planning to buy a home and contemplating whether to choose a Central Jersey or South Jersey. My primary criteria is job market, especially for IT / Software jobs. Central Jersey seems to be a better option as living there allows option to commute of NYC apart from other cities in Central jersey. South Jersey gives easy access to Phili City Center, King of Prussia etc. South Jersey looks better in terms of property prices, when compared to Central Jersey..I will truly appreciate if you can share your perspective. It will help me a lot.

Your assessment is right, but your plan is all wrong.
Don’t move until you actually have a job. Make your decision then. It should be obvious. I would say thought that if you get a job in Philly or Kingn of Prussia, strongly consider looking at what you could afford in PA suburbs, ESPECIALLY if the job is in a place like King of Prussia or another suburb. You don’t want to commute from SJ Philly suburbs to PA Philly suburbs.
If looking for more affordable housing, and if the job you land is in Centeal Jersey, you can potentially buy in South Jersey and commute to Central Jersey, provided the distance is not too far. That could be the best deal of all, if, say, you land a job around the Princeton/West Windsor area and can commute from an area like Mount Laurel, or further north, Bordentown.
you get what you pay for. There is always a reason one place is cheaper than another. You just have to decide if you put value on what most other people do
