I have one of the old style birth certificates and need a new one
to apply for a drivers license in a new state. Apparently, the fact that I have a CA
license since I was 16 doesn’t matter to my new state even though it’s a Real ID, but whatever

In what state were you born? If it's California, you can order a copy of your birth certificate online.

If you were born in NJ, you can go to Trenton, NJ and pick up the long version of your birth certificate in person. I picked up mine, along with my parents who don't live in NJ anymore.

+1
Several years ago, I took a friend to Trenton to get an official copy of his BC. There was a delay of ~2 hours before we could pick it up, so we used that as an opportunity to tour the nearby Old Barracks museum. With the exception of the waiting period, it was very easy.

I was able to get a birth certificate for my brother who was living in Oregon born in Newark by visiting the offices on Broad Street. I don't know if you can walk into these offices anymore though.

Looks like you can do internet orders now. Before they made you go to Trenton to pick them up, just like in Romans did in the time of the Lords birth. Walk-in's are same day, internet orders are 6 weeks
