You could also try Staten Island, which is so cut off from the rest of NYC it can defintely feel like another town entirely. That's because there is no subway to Manhattan or Brooklyn, just the ferry, Express buses, or driving over a bridge to either New Jersey or Brooklyn. I suspect that somewhere on The Rock you can find a sub $1,000 a month apartment.
Even the ferry is pretty good. Perfect if you work in Lower Manhattan. That's not the OP's situation here, but it is cheaper and does have good access to Manhattan.
OP, another place to consider is Jersey City, where the prices (I've heard) have not appreciated as much as in nearby, trendier Hoboken. And PATH service from JC gets you into the city 24/7.
Outside of Manhattan your best option would probably be somewhere in Jersey. Jersey City may be an option. 15 years ago, there were places here to rent with that price range you put. Those rent prices don't exist here anymore
You can find a room for 600-800 in Brooklyn or Queens. You might have to do some searching, but they exist. Try Craigslist or one of the many NYC housing FB groups. Same goes for Jersey City, Hoboken, ect.
In all of these cases though a room means you will be living with roommates. And 600-800 is pretty much impossible for a single apartment in the NYC area, whether it be the boroughs, Jersey, Long Island, ect. Maybe, MAYBE you could get a really crappy studio in central Jersey or Staten Island but it'd be extremely difficult to come by.
