My son will be 5 in October and is immature for his age.
He should start public kindergarten in September but I know he is not ready.
My questions are:

Can I hold him back or I have to prove he is not ready for K?

Do they have transitional kindergarten in NYC? I have no idea, we were planning on continuing private when he decided to misbehave so he is not welcomed back.

Last question, would they allow half days? He is def not ready for full time school.

Maybe your question is better asked in a parenting section. But what makes you believe your child is not ready for school? Teachers are knowledgeable in their field and should know how to work with your son. Is he special needs? There are schools for that. Has he ever been in a classroom setting before? You mentioned that he misbehaves, in which ways? Remember what your child does with you is not necessarily what he does in a different setting. Again, this section is not the best if you want real answers.

I don't think that kindergarten is mandatory here, but if you don't send him, they may just put him 1st grade next year. I'm not completely sure anyway. Why not sign him up and then if he's behind in Kindergarten, the school may recommend that he repeats it the following year.

All kindergartens are full day in NYC as far as I know.
