Just to reinterate, Sioux Falls is 62 miles from Vermillion, which would be close to a 2 hour round trip commute. Vestal is a suburban town that is adjacent to Binghamton, but is also across the Susquehanna River from Endicott, Johnson City and Endwell.

We love parks, libraries, and "sciency" stuff.

I probably will love to be in Ithaca - however, I definitely will not like the commute esp in the winters.

Well, it would be the same as a Sioux Falls to Vermillion commute. So, it may still be possibility.

With that said, Binghamton has those things that you like to do. So, it wouldn't be necessary.

I may not have looked at the right place, but I could locate only one public library in the Binghamton area, that too in Vestal.

Also, where can I find the options to do groceries - like Albertson's, whole foods, safeway etc in Binghamton?

There are multiple libraries in the city of Binghamton, with libraries in Endicott, Johnson City and some of the smaller towns in Broome County. Broome County Public Libraries

As for grocery stores, there is a Wegmans in Johnson City by the Oakdale Mall around Harry L. Drive. They also have Price Chopper and Weis, among others in the area too.
