Gastonia is a large suburb of Charlotte. Hickory might work for the OP. There are a lot of places west of the Triangle that would work. I wouldn't recommend Lincolnton for her because I wouldn't do it myself. I looked there myself. She might be happy in Boone but I'm not sure that she'd be happy with the winter weather.
Sorry not trying to be confusing. Didn't realize the cheaper areas are the most rural I guess.
I'm used to Long Island as far as convenience of stores etc...so I'm trying to just compare what I'm reading to what I know. I lived in upstate NY during college and I guess you could say it was more rural. The closest shop we had was a walmart in town but if you wanted a mall or anything more than walmart you had to drive about 30 to 40 minutes. It was okay but inconvenient at times.

Then, most parts of Chatham and Moore Counties are more like upstate NY, where you may have to drive 15 miles to get to the Walmart. Pittsboro and Pinehurst have 15,000 to maybe 20,000 people.
I live in NC and would recommend the Winston Salem/Hickory area for a charming, mountain-like feel that has A LOT to do near by (W.S. is very close to Greensboro which has basically everything you could hope for as far as shopping, entertainment and amenities). Or the Wilmington area if you'd like an upper-town area close to the beach. All 3 of these areas have nice 1-bedroom apartments for well under $700 a month and also nearly always hiring teachers. Wilmington is a bit more prestigious and ritzy, Winston Salem and Hickory are more oldddd money energy but very quaint!
