As for humidity, I suggest you move to Arizona or New Mexico. Or western Georgia for that matter. St. Pete might work. Ocala, not so much.
If you have a yard full of fire ants, you're doing it wrong. Amdro is cheap and they're extremely easy to take care of.

And kayaking is plenty safe. Gators and snakes want nothing to do with humans. It's not like they're hiding in the shadows waiting to attack or something.

Amdro can't be used in herb gardens, or anywhere that might expose it to food. Amdro loses its effectiveness completely if it gets wet (which means, every time you water the lawn). It also only has a 3-month shelf life once it's been opened, so you can't buy a year's supply of it. It's not safe for use if you have a dog that you leave out in the yard for any length of time (and red ants are't safe if you have a dog you leave out for any length of time). It causes rashes on the skin of people, so it has to be used with gloves, and with safety goggles because it can cause blistering if the dust gets in your eyes.

If you're looking to enjoy nature, the last thing you want to have to deal with is laying pesticides to kill red ants.

Just pour a concrete slab on the entire yard. Ant problem solved and no need for pesticide or worrying about the animals or yourself getting poisoned.
