Going out to Anaheim to visit Disneyland and Disney CA Adventures, was wondering if Wed/Thu would be less crowded time periods to visit?

Also, what's the best beach to visit from there? Looking for a kid friendly beach on the non Disney days. Also, is a visit to an Angels game worth it?

Its summer, every day of the week will be crowded. Not as bad as the weekend but its still packed during the week. Huntington Beach would be closest, kids can play there. Angels are for sure worth it, we have the 2nd best record in the majors and the best home record

Mbell is correct, every day in the summer is crazy crowded, which is the main reason why the seasonal pass holders with the "California select passes," are blacked out and can't even go most/all summer. Tuesdays are better than most days but you should wait to go till September or January.

The week after Labor day is the best, right after school starts. As empty as it ever gets. However, the OP has kids though.
