Pretty much all of Seminole County can fit the bill (Altamonte, Longwood, Lake Mary, Sanford, Casselberry...) Getting places might be a bit of a chore, though, so it depends on where you need to be close to.

I thought there would be lots of short-term rentals near Disney or even Clermont. I guess I assumed these places would cost less than a leased apartment. We want a one bedroom. I don't know where to search for them online.

There are short term rentals that can cost less than a leased apartment but I can pretty much guarantee you wouldn't want to be living there. If you're not looking for a short term lease other than to save money potentially, forget about it. You can do well as stated prior if wanting to be near Disney in places like Clermont or the Four Corners area (Davenport).
