It's been a good number of years since the babyhood days in our house, but I've been noticing non-plastic crib mattresses selling on the internet lately.
My first thought was, "that can't be too practical"...
Did you waterproof the crib mattress in your home with a rubber sheet?
I always changed the crib using flannelette fitted sheets/w a rubber sheet over, even though the mattresses I used were plastic. Kept both mattresses fresh and new as well as stain and odour-free.

So why all the threads about diapers and rubber sheets?
Well, I can say even if the mattress doesn't look or feel like the traditional plastic mattress, it might still be. The one I have looks and feels like fabric and does not make that crinkle noise, but it's actually a tight weave plastic-ish substrate. Kind of mimic's fabric but is waterproof etc.
The mattresses without the plastic are of interest to families worried about off gassing and other issues related to chemicals etc.
