You're pretty much correct. I have a good friend who worked in a slaughterhouse when he was very young and told me about a lot of stuff. They had a few 55 gallon drums with one end cut off and would fill it with everything that would go to the hotdogs. Basically anything that can't be sold as is goes into the containers to ultimately be processed into hotdogs. Oh yeah, and sometimes "Bubba" would use those containers as his chewing tobacco spit can.
