I haven't read through all the responses, but how old is your mother? Could this be early dementia? My mom had dementia in her 60s.

I just can't believe what a mountain you've made (in your own mind) out of a very tiny molehill.
I guess I'm frustrated with being called a liar for no good reason. Love you too Mom! Call me crazy.

Caregivers forum would suggest you have her checked for early onset dementia of some sort.

I find it odd that you wouldn't have touched base at all after sending the e-mail a week before. Most people confirm if that much time has gone by.

Nobody called you a liar. Your defensiveness is way out of scale for the situation you describe.

So what exactly is she saying Koko when I tell her I didn’t get her emails and she says “Well, emails can be deleted, can’t they.”

You lost all credibility there.
Nope, you asked the question so you get the answer. Because you said "Sure, she COULD grab an uber, but maybe she doesn't WANT to. " where you focused solely on her wants without regard to what inconvenience it may cause others. The epitome of "self-centered".

When someone tells me that they are coming into town, the next words out of my mouth are, "Do you need a ride?". I don't consider the person self-centered if they say yes.

That makes no sense.

Someone is not self-centered for wanting to catch a ride with a relative, where they can catch up, maybe stop on the way, etc. etc.

You told her you did not get the emails. That should have been the end of it, but you said, "You can check my phone if you want too. "
THAT part was confrontational on your part. Telling her she could check your phone, made it sound like you had something to hide and her mind went to, well you can delete emails can't you? If you had said that to me my mind would have gone there also.

Every day in the year, around the world, millions of emails disappear or get deleted inadvertently or accidentally. You have chosen to fantasize that your mother is calling you a liar, especially after you made the insulting offer that she could check your phone.
