I think you're going to see more in the way of small plates, particularly international/ethnic dishes.
Healthier snack foods in grocery stores. Recyclable packaging for grocery store items. Hormone/antibiotic free meats will be continuing to be demanded by consumers (already are in Europe). And I wouldn't be surprised to see non-GSM foods get some increased demand. This all applies to those who can afford to shop at the higher end grocery stores. For lower income America, the emphasis will be on low prices.

I don't have celiac disease and I notice a difference when I cut out gluten. While I don't think it's as evil as people make it out to be, but I believe most people will do better without it. Especially the highly processed wheat products.
FYI it's GMO. GSM pertains to cellular networks. Organic and gmo free will always be on the rise. Even some big food companies are dropping dye's, certain ingredients, gmo's, antibiotics/hormones.
