We've gotten these as well (and received one) and they are convenient. Plus, some of them have Peach Bud candies, which are my favorite NC thing.

For a nice gift, a good piece of pottery from Mark Hewitt (Pittsboro) or from down around Jugtown.

If it was for the holidays, I’d especially recommend some foodstuffs from Old Salem. Sugar cake, Moravian cookies. Still not a bad option.

If you had the time to go to Seagrove you could get pottery from Frank Neef, Eck MacCannless, Seagrove Art Pottery, or any other potters in that town. You could then go 20 minutes south to STARWorks glass to buy hand blown glass. If a trip to Seagrove is too far, there is a Seagrove Pottery store located in Salt Box Village in Cary. They have pottery from potters all over the state including a few from Seagrove. Cary Pottery is another local to Cary option. Check out some of the local farmers markets for other locally made items like soap, hot sauce, cider, etc.

Go to the gift shop at the NC Museum of History in Raleigh. They probably have the best selection of NC specific things around.

There's a store at Crabtree (if you go to malls yet) literally called something like "NC gifts" or similar. It's upstairs on the half near Belk, I think.

The NC History Museum in downtown Raleigh would also have a lot of gift-type things.

Local wines are fun/SWEET if they've never tasted a scuppernong or muscadine. And the grape juice is good if you can find some.
