I love Falafel so I just made them after not having them in a while. I followed a recipe from the Internet which is 1 cup canned chick peas, 2 tbsp flour, 1 tsp baking powder, cumin, coriander, parsley, chopped onion and garlic. All in the food processor than in the fridge for 2 hrs.
I deep fried them and they fell apart. Could it be I need to use dry beans, or add an egg or use baking soda instead of powder? I did roll them in bread crumbs and decided to just pan fry them and so they held their shape. I rather not use egg to bind them.
It sounds like you need more flour to bind them possibly - were the chickpeas very well drained?
Using the dried and soaking them overnight seems to have a better result than the canned (just mho). Also the trick of putting them in the freezer for 30 mins then rolling in flour JUST prior to cooking works (works for tuna & salmon patties too, which also have a tendency to fall apart when they hit the skillet lol)

Thanks for this link, I will not give up experimenting as I love Falafel. I wound up pan frying and they came out good!! But I bought a deep fryer to experiment.
