I was wondering whether anyone would have a good Jambalaya recipe . I usually buy ready made ones from my supermarket ( which is actually quite good but not the real thing). Thank You.

My kid's boss has a favorite recipe which always won him many compliments, but it got lost in our move.
With all of the southerners on this forum, I would think that someone would come up with a winner for you.
Jambalaya is one of those "thrown together" dishes that are all different ... and all, generally ... quite good.
My folks handed down to me a wonderful New Orleans Cookbook published by Peeless Printing Co (many old timers will recognize this cookbooK), "A Book of famous old New Orleans Recipes, used in the south for more than 200 years" from their time there in WW2 ... which is a great start for for basic concept:
4 cups boiled rice (have cooked and cooling in the 'fridge)
1/2 lb ham
1/2 lb sausages
2 green bell peppers
4 green onions
2 medium dry onions
1 can tomato paste
fry chopped onion in bacon grease until edges begin to brown, then add tomato paste, green peppers, and ham/sausage. Continue frying slowly about 20 minutes with continuous stirring. Fold in the rice, then turn down the heat to very low for at least an hour, stir now and then. Best when prepared the day before, kept in the fridge, and then reheat to serve.
Thanks to you both , I just love a good Jambalaya ( I had some excellent ones in New Orleans and Baton -Rouge). I think it's like most dishes and everyone has a different version !
