Years ago we went through a period of making a lot of turkey casserole that was quite simple and was basically a one dish meal.

One big bag of frozen mixed vegetables
Enough turkey to suit you taste
Corn bread mix

Simply mix turkey (I like to use smoked turkey from a turkey breast) and veggies and put in the size glass pan you need for the quantity you are using with enough room on top for the corn bread batter. Allow room for the cornbread to rise. We never tried to use a bottom crust. Not needed.

Sliced tomatoes and pickled beets on the side was our favorite.

I really like this idea, Nomad.. I will try it!
Clearly, it will be good if I use chicken if I don't have any turkey on hand. (But I will have Thanksgiving leftover turkey!).
I would like to use some cut green beans for the veggies.
It's an inexpensive, wonderful homemade meal!

I imagine there are all sorts of ways to vary this dish!
I guess you could even put a little gravy on top after it gets on your plate?!
