It's fun and fairly easy to make meringue baskets and they are so tasty when filled with strawberries of your favorite fruits. These are just light and airy and fun to eat.
Meringue Baskets
3 egg whites
1/3 teaspoon vanilla extract
1/4 teaspoon cream of tartar
3/4 cup sugar
Separate the egg whites into a bowl and let stand 30 minutes at room temperature. Beat the egg whites on medium for 1.5 minutes and then add the vanilla and cream of tartar and continue to beat until soft peaks form. Gradually add the sugar one tablespoon at a time and beat on high until the whites form stiff peaks.
Line a baking sheet with parchment paper. Place the meringue in a pastry bag or a sandwich bag and cut the corner off. Pipe meringue to form 7 to 8 cup about 3 inches around. Or, drop by tablespoons on parchment and form a basket with a spoon but pushing down in the middle.
Bake at 275 degrees F. for 50 minutes until set and dry looking. Turn off the oven and do not open the oven door for one hour. Fill the baskets with your favorite fruit, although I like sliced strawberries the best in these.
