Prepare instant or homemade mashed potatoes the way you normally do and you can add in any of the following to make them really stand out.

Horseradish mashed potatoes: You can add the creamy variety or the one you get in a jar to make cocktail sauce.I am adding creamy horseradish to my potatoes tonight

Fresh or dried dill

Shredded cheddar cheese and some bacon bits

Sour cream

Cream cheese

Roasted garlic

onion soup mix

fresh chives or scallions

buttermilk.

We top ours with diced red and yellow peppers, fresh parsley, dill or other fresh herbs.

When I make instant I add plenty of garlic powder, then add a couple tablespoons of Marzetti's Asiago Peppercorn salad dressing and plenty of butter....put them in a casserole dish and put mozzarelli cheese on top and bake for about 20 - 25 minutes at about 350 degrees.

When I add cream cheese, (not very often), I like using garlic & herb or scallion rather than plain. Instead of roasted garlic, sometimes I'll just saute garlic in a little olive oil and add that instead. If I only have red horseradish in the house, (which would make the potatoes ugly), but want a little bite, sometimes I'll add shredded pepper jack cheese.

The best potatoes I have ever had are Gordon Ramsay's crushed Nicoise potatoes as seen in this link. Roasted lamb rumps with crushed Niçoise potatoes recipe - Recipes - BBC Good Food-

They go well with any roast.
