In a medium saucepan or fondue pot, combine beer & flour. Using medium to low heat, add cheeses, 1/2 cup at a time, blending until melted. Add Tabasco & garlic, stirring well. Serve in a fondue pot with baskets of cubed French bread & bite-sized raw vegetables.
Beer Bread
3 cups self-rising flour
2 TBL sugar
12 oz can beer, room temperature
7 TBL unsalted butter, melted
In a large bowl, combine flour, sugar & beer. Mix thoroughly. Pour into a lightly greased 9x5" loaf pan or 1 1/2 to 2 qt casserole. Spoon 4 TBL of the melted butter evenly over the top. Bake in a preheated 350 oven for 20 minutes.
Brush top with remaining butter. Continue baking until the top is golden & a toothpick inserted in center comes out clean, about 25 minutes.
Beer Batter for Fresh Vegetables or Fish
2 eggs, separated
12 oz beer
1 TBL butter, mleted
1 tsp dry mustard powder
2 tsp salt
Dash of pepper
1 1/2 cups flour
Fresh vegetables or fillets of fish
Flour
Oil for deep-frying
Beat egg yolks, beer & butter. Add mustard, salt & pepper. Add the 1 1/2 cups flour & mix until smooth.
Beat egg whites until stiff. Fold into batter. Dredge vegetables or fish with a small amount of flour, coat with batter & fry in hot oil until golden.
Beer Cheese Soup - serves 6
3/4 cup butter
1/2 cup diced celery
1/2 cup diced carrots
1/2 cup diced onions
1/2 cup flour
2 TBL grated Parmesan
6 oz grated cheddar
12 beer
5 cups chicken stock
1/2 tsp dry mustard powder
Salt & pepper to taste
In a large saucepan, saute vegetables in butter until tender, but not brown. Blend in flour then cheeses & beer. Add stock & seasonings & simmer 10 minutes.
I always use double or triple amounts....."one for the recipe...one for the chef....one for the recipe....two for the chef........."
Speaking of cooking with beer....I made Chili last week, and used 2 bottles of beer in it (made a huge pot for dinner but also for freezing).
It was the first time ever, that I've tried it with beer...because my buddy from TN told me to.
Let me tell you...besides using ground chuck (market grinds), different beans, crushed and tomato sauce and the beer...it was the most PERFECT and yummy Chili I have made....EVER!!!!!!
