While waiting to see my cardiologist for a routine appointment, the loop on the TV in his office lobby showed this recipe for "heart health". I saw it twice so I got the easy instructions correct. I plan to make this myself, and I am not a cook.

Preheat oven to 425. Take an avocado and cut it length wise, scoop out the ball and enough of the flesh so the opening holds one raw egg. Crack an egg into the opening and bake the avocado and egg for 15-20 minutes. Sprinkle lightly with black pepper and add a dollop of salsa. Enjoy!

I found that idea quite awhile ago and tried it maybe twice but I honestly did not like it very well, hence the reason I had to try it more than once. But I am also not a runny egg person so perhaps that had something to do with it. Otherwise, I found it pretty bland, to be honest.

I do however, enjoy some avocado mixed with scrambled eggs, onions, red peppers, mushrooms, cheese, garlic and pepper.

My all time fav way to eat avocado is just plain old guacamole.

I don’t like the idea of cooked avocado, but I do love it on the side for breakfast. My DIL is Puerto Rican, and she had avocado trees at home. They used to eat a lot of them, including with eggs for breakfast.

I made this several years ago. I hated it. I love runny eggs. But cooked avocado? *shiver* I did not like that AT ALL.

It has actually been around for a long time now. Plenty of photos here:

It's the picture that made me want to try it a few years ago. DON'T BE FOOLED LIKE I WAS!! (Of course, the idea of cooked avocado may appeal to you, in which case we can't be friends anymore. )

ETA: I just realized that I'm behaving like the child sitting at the table saying "ewwwwww! gross!" about the things that people are eating. So rude of me. I'm sorry. I didn't like it -- simply because of the warm avocado -- but you might. Lots of people do.
