I am an adopted Italian - love pasta, sauces, etc. My family wasn't very daring in cooking - basic spaghetti was the "Italian" dinner growing up. Tried some Sweet Italian sausage, from the local Harris Teeter - made in store and mmmmmm good, now I'm looking for recipes to make with that sausage. I CANNOT eat any type of peppers - so peppers and sausage is out....

I use it in Spaghetti. (I can't tell if that's what you did also). Just cut the links into about 1 inch pieces and treat them like meatballs - fry them up until fully cooked, and then pour the marinara sauce over them. Much better than hamburger meat.
I make lasagna using Italian sausage and everyone loves it. It adds another layer of flavor to the dish. Of course, I split the sausage casing and fry the crumbled sausage.
Brown the sausages in a little oil and let them cook through. Take out the sausages.
Cut onion and bell pepper into strips and cook them in the same pan until they're soft add some minced garlic if you like it, a little salt and any other seasonings you like. Put the sausages back in the pan with the vegetables. Let it cook maybe 10 more minutes. Makes a nice sandwich on a long crusty roll, some people like to add a little marinara to the sandwich.
I make Italian wedding soup; the recipe usually calls for ground beef or pork made into small meatball shapes to drop into the soup. I just open the casing and panfry the ground sausage then drop them in the bowl that's brewing the rest of my Italian wedding soup.
Mix it in with ground beef for meatloaf. I always mix Sweet Italian sausage and ground beef 50-50 for lasagna or meatballs. Of course you can fry them whole in a skillet to have with pasta and your favorite sauce.
