We've used it in an amatriciana sauce and I'm considering using it in an Italian meatball recipe. I would appreciate any other recipes you folks might use it in.

I had never heard of this stuff, and I'm intrigued. I'll probably end up buying some, but I'm disappointed to learn that we can't get the real think here in the states. What we can get is, evidently, not as spicy

Anyhoo, I found this article that explains what it is and gives many ways to use it.

The first time we looked for it, we went to a local family owed Italian market. I asked if they carried it at the deli and was told no. A women who worked in the butcher shop over heard me ask and popped in and said they did carry it and showed us where it was. We went to get some yesterday and it wasn't where we had been shown previously. I went and asked the butcher shop and was told no again. My wife was looking in a section of the deli where they keep specialty items and found it there. I took the package back to the butcher and told them (while showing them the package) the next time someone asks, they know they carry it.

Probably like Prosciutto di Parma or San Daniele, our stupid government put certain requirements on it. I don't know how much more spicy it could be. What we bought was pretty spicy and I'm a chili head.
