I think corn in chili would be fine.
I confess that I use 2 pkg. McCormick Original Chili mix, 1-2# of ground beef, a large can of crushed tomatoes, a small can of diced tomatoes, and 2 cans kidney beans with liquid. We like the flavor, and it's easy.
2 large red onions
2 green peppers
1/2 cup Penzey's ground ancho chili
1 T. Penzey's ground cumin
1 t. Penzey's ground chipotle
1 28 oz. can of Cento whole tomatoes (I pulse them 4 or 5 times in the Cuisinart)
2 cans of kidney beans
That's my basic vegetarian chili. As it happens, I have a lot of corn this week. I will use at least two ears' worth in making chili.
If I make meat chili, I reduce the onion and pepper to one instead of two, and use a pound or more of ground chicken or turkey thigh.
Chili depends on how much of a purist you are. Unless you are trying to make chili con frijoles for example, there should be no beans in it. But if what you are trying to make is a tasty meal, you can put in anything you like.
dried beans
browned hamburger
canned tomatoes.
cumen
chile powder
some type of hot pepper or whatever that will add some heat like cayenne pepper
browned onions
garlic
salt and pepper to taste
after browning the onions and meat, and cooking the beans over night I add everything together in teh crock pot and cook all day.
I've put corn in "dinner" chili. Dinner chili is your basic beef, tomato, bean concoction.
