Marinate a pork loin in lemon juice, garlic and olive oil. Cook, cool and slice. Take a baguette or any crusty roll you prefer, and slice open horizontally. Spread fig jam on the bottom half. Then add a layer of brie, then a layer of pork. Next is supposed to be a layer of arugula but I have used lettuce, spring greens and sometimes spinach. Spread a layer of mayo on the top piece of bread and put that on the sandwich. Then you eat it!

Seriously I love this sandwich!
Sigh.....on rereading this I find I made a mistake! Not pork loin but pork tenderloin. Seemingly a small mistake but it would make a difference!

I realized that I'm going to a ladies wine and cheese party next week. It will become a baked brie with some kind of TBD topping. Liking the cranberry and nuts idea.

There's a recipe in 365 Ways to Cook Pasta for a salad that uses up leftover roast chicken and St. Andre cheese.
