I'd personally start with a good non salty beef base ( Au-Jus )
then add a bit of fresh ginger, garlic, oyster sauce.
Once hot add the meat and veggies, keep an eye on the heat
and hopefully you've seared the goods before you add the beef
base. a mixture of water and corn starch would be the time to
SLOWLY add while constantly stirring until you reach your thickness
you prefer and then add a bit of dark brown sugar
I love pork (or beef or chicken or salmon) with peanut sauce or Thai sweet chili sauce -- I always have both on hand.

either peanut sauce or thai would be my first idea. Of course I do not do stir fry as often as I do fried rice and cook veggies like snow peas separately. Generally I use fresh ginger as well. My fried rice consists of rice, obviously, sesame oil, peas, carrots, some type of meat or fish and the sauce plus a little soy sauce. Sometimes I skip the peanut or thai sauce and just use soy.
